STRAIGHT PACK LEMON PURÉE (31 LB CTN)

Description

Lemon Purée is made by finely grinding parts of the whole lemon fruit. The juice is then concentrated under low temperatures and high vacuum, then blended with fresh, pulpy juice and a portion of a freshly pressed peel. The purée is then frozen at zero degrees Fahrenheit.

Total Soluble Solids 45–48 Brix (corrected for acid content)
Volatile Oil Content 4.5% by volume
Pulp Content 10% by volume
Brix 7.5% +/–1  

Quality Factors   Products shall be free from foreign materials, flavoring additives or artificial coloring.

Packaging   Product is packed in a 31 lb plastic container.

Storage   Product to be stored at a temperature of zero degrees Fahrenheit or below.
