IQF PLUM HALVES
Description
Pitted, purple plum halves, unblanched, with vitamin C added, are packed in 30 lb net weight cartons.
Preparation
Pitted, purple plum halves shall be produced from sound, wholesome plums, free from disease and excessive pesticide residue. The plums shall be sorted to remove excessive defects, pitted and inspected, to insure compliance with the specifications.
Freezing The plums shall be placed in an IQF blast freeze chamber at zero degrees Fahrenheit or lower and frozen before packaging.
Packaging The plums are placed into a poly bag, in a fiber case and the case is sealed.
Color The plums shall be bright, uniform in color internally and externally, which is characteristic of the variety. The color shall not score less than 17 points, as defined by USDA grading procedures.
Size The plums are field run. Units smaller than 320 mm, will be removed. No more than 10% of the units may weigh more than twice the weight of the smallest unit.
Defects Defects as defined by the USDA grading procedure shall not exceed the following limits, per 16 ounces of finished product.
