Frozen pineapple chunks are made from ripened pineapples tht have been peeled, cored, trimmed, cut and individually quick frozen (IQF).

Specifications

Brix:   No less than 10 (within 95% of specs)
pH:   3.2 – 4.1 (100% within specs)
Taste:   Characteristic with good sugar/acid balance
Temperature:   -18 degrees Fahrenheit (100% within specs)
Texture:   Soft, but not too crunchy (less than 10% core, not dry)
Additives:   Free from all additives
Pesticide Residues:   Free from all pesticide residue
Color of Pulp:   Pale to average yellow, no off colors, even color
Shape/Form:   All pieces should be a regular, even chunk shape (5% max pieces out of specs).
