DRIED APPLES

Description

Evaporated Apples (also called “Regular Moisture and Dried”) are prepared from sound, properly ripened fruit, which has been washed, peeled, cored, sorted, trimmed, cut to the desired size and properly dried to average, no more than 24% moisture by weight (unsulfured product to average no more than 18% moisture).

In the case of “dry cut,” an additional cutting is required, following the drying process. The product is inspected throughout the process to ensure a clean, wholesome product, which is in complete compliance with the provisions of the Federal Food, Drug and Cosmetic Act. Evaporated apples are “Circle K” Kosher Certified.

Variety

Granny Smith, Delicious, Fuji and Gala are the primary varieties available.

Flavor/Odors

Typical of variety, with no musty, decayed or other off flavors

Color

    Sulfured:   light yellow to white
Unsulfured:   light brown to tan
Sulfite Alternative:   yellow to off-white

Preservatives

Sulfur Dioxide:   Approximately 500-1500 PPM (Unsulfured and Sulfite Alternative products are available by special order.)

Storage Recommendations

Evaporated Apples with Sulfur Dioxide can be stored for short periods of time (one month or less) at room temperatures, in a cool, dry atmosphere, but for prolonged periods, at 45 degrees Fahrenheit or 7 degrees Celsius, in dry conditions at all times.

Shelf Life  36 months from date of manufacture.

Reconstitution Ratio

Although the end usage, process and style of cut, will ultimately dictate the correct ratio, Evaporated Apples generally require five (5) parts water (by weight) to one (1) part apple, to fully reconstitute.

Packaging & Shipping Information

Evaporated Apple products are packed in a double-sealed, 80 microns polyethylene bag, inside a corrugated fiberboard carton. The product is transported in 20’, 40’ and 40’ high cube shipping containers, stretch-wrapped and palletized or floor loaded.
